ESPAÑA. Me han comentado que si la escritura de un piso la firmaron 2, no puede ampliar la hipoteca uno solo?

sí puede ampliar uno solo la hipoteca, salvo excepciones

Si ella es co-propietaria de tu piso, me temo que si quieres volver
a hipotecar el piso, tiene que dar su consentimiento, eso es lo que hay, intenta ponerte a buenas con ella.

es imposible ya que al figurar en la escritura es copropietaria para todo, cobrar y pagar.

No hay solución. El primer contrato lo firmaron dos personas, más el Banco, más el Notario, para modificar cualquier cosa de dicho contrato tienen que intervenir todas las partes.
